სფერი comes from the Georgian word “orange”, to evoke the orange soul of this wine.
Our philosophy follows the ancient Georgian artisanal winemaking method, to which this wine is a tribute.
The vineyard is located at an altitude of 400 meters in San Lorenzo Maggiore, Benevento Province. Clay and limestone soil, very exposed to the Mediterranean wind and sun. Falanghina grapes are selected, harvested by hand and softly pressed. Contact with the grape skins is long, at least 4 weeks.
Fermentation takes place with indigenous yeasts in Qvevri with a capacity of 1,000 litres, without additives. After 12 months, it is bottled without any clarification or filtration.
This is an interesting wine, with an explosion of orange, peach and honey aromas, combined with citrus and white flowers. It is dry, high in acidity and tannins, with a long persistence.
